Shipwreck (12” dutch oven)

1 large package hash browns

2 lbs. ground sausage (or bacon in small pieces)

½ onion, chopped

12 eggs (scrambled with ½ cup milk)

10 oz shredded cheese

Brown the sausage and onion in the dutch oven.  Remove and brown the hash browns in the drippings.  Return the meat, add the eggs and stir.  Cook for about 15 minutes, then spread cheese over the top and cook for 5 more minutes.  Serve with ketchup and salsa.

Note:  Picky-kids shipwreck:  omit onion

Scalloped corn

2 12 oz. cans creamed corn

4 eggs – scrambled

5 slices bread – crumbled or shredded butter

Put everything together in the DO and mix well.  Put pats of butter on the top.  Bake for about 30 minutes until firm.

BBQ Ribs

4 lbs. (or more) boneless ribs (beef or pork)

½ cup chopped onion

½ cup chopped celery

½ cup green pepper

2 lbs. BBQ sauce

Brown or boil the ribs.  Add vegetables.  Pour in the BBQ sauce and stir.  Cook for at least 2 hours, stirring occasionally.

Scalloped Potatoes

6-8 potatoes – unpeeled and thinly sliced

1 lb. Bacon

1 onion –diced

salt & pepper

butter

grated cheese

1 egg

1-2 cups milk

2 Tbsp. Flour

Fry the bacon and cut into 1-inch squares.  Leave grease in bottom of DO.  Arrange a layer of potatoes, then sprinkle on onions, bacon, cheese, butter, salt & pepper.  Add another layer of potatoes, more onions, cheese, etc., layering until all ingredients are used up.  Mix the eggs, milk, and flour, and pour over.  Cook for 1 hour.

Baked Beans

½ lb bacon

1 lg. onion – diced

4 c. kidney beans  (soak overnight if using dry beans)

1 c. lima beans + 1 tsp. Soda

1 c. brown sugar

1 tsp. Vinegar

1 Tbsp. Liquid smoke

1 c. ketchup

Fry the bacon and remove grease.  Add onion.  Drain off grease and add all other ingredients.  Stir, cover, and bake for 1 ½ hours or more.  (Canned beans work great too.  Make it up!)

Cobbler

1 can fruit pie filling

1 cake mix + eggs, oil, water, etc.

Nuts if desired

Prepare the cake mix per the directions.  Spread the pie filling over the bottom of the DO.  Pour the cake mix over the top.  Bake approx. 45 minutes.
